Southern-style Macaroni Salad

Familiar and delicious, this simple macaroni salad is full of flavor. Sweet pickles and fresh peppers add a satisfying crunch, while aromatic paprika brightens the dish in both flavor and appearance.
Ingredients
- ½ cup sweet pickles chopped
- ½ cup onion chopped
- ½ cup red pepper chopped
- 2 tablespoons sugar
- 2 cups mayonnaise
- 1 16-ounce package of elbow macaroni, cooked and drained
- 2 hard boiled eggs peeled and chopped
- ½ teaspoon paprika
- ½ teaspoon garlic powder Salt and pepper to taste
Instructions
- Combine pickle, onion, red pepper, sugar and mayo in a bowl.
- Pour over cooled macaroni and mix well.
- Add eggs and stir in by hand.
- Mix in paprika and garlic powder and season as desired with salt and pepper.
- Chill at least four hours before serving.
