Southern-style Macaroni Salad

Familiar and delicious, this simple macaroni salad is full of flavor. Sweet pickles and fresh peppers add a satisfying crunch, while aromatic paprika brightens the dish in both flavor and appearance.

Ingredients
  

  • ½ cup sweet pickles chopped
  • ½ cup onion chopped
  • ½ cup red pepper chopped
  • 2 tablespoons sugar
  • 2 cups mayonnaise
  • 1 16-ounce package of elbow macaroni, cooked and drained
  • 2 hard boiled eggs peeled and chopped
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder Salt and pepper to taste

Instructions
 

  • Combine pickle, onion, red pepper, sugar and mayo in a bowl.
  • Pour over cooled macaroni and mix well.
  • Add eggs and stir in by hand.
  • Mix in paprika and garlic powder and season as desired with salt and pepper.
  • Chill at least four hours before serving.
