Southern-style Macaroni Salad
Familiar and delicious, this simple macaroni salad is full of flavor. Sweet pickles and fresh peppers add a satisfying crunch, while aromatic paprika brightens the dish in both flavor and appearance.

- ½ cup sweet pickles chopped
- ½ cup onion chopped
- ½ cup red pepper chopped
- 2 tablespoons sugar
- 2 cups mayonnaise
- 1 16-ounce package of elbow macaroni, cooked and drained
- 2 hard boiled eggs peeled and chopped
- ½ teaspoon paprika
- ½ teaspoon garlic powder Salt and pepper to taste
Combine pickle, onion, red pepper, sugar and mayo in a bowl.
Pour over cooled macaroni and mix well.
Add eggs and stir in by hand.
Mix in paprika and garlic powder and season as desired with salt and pepper.
Chill at least four hours before serving.
