Watermelon, Cucumber, and Feta Salad
A sweet and summery take on a classic dish. The watermelon, cucumber, mint, and lime combine for the ultimate refreshment, while the feta introduces a creamy element to the mix.
Ingredients
- 2 tablespoons fresh lime juice
- 2 tablespoons extra-virgin olive oil
- 4 cups seedless watermelon cubed
- 2 medium-sized cucumbers seeded, cut into ¼″ slices
- 1 cup feta cheese crumbled
- 4 or 5 mint leaves sliced thinly
Instructions
- Combine lime juice and olive oil in a small bowl.
- Toss watermelon, cucumbers, and feta cheese together in a salad bowl.
- Pour dressing over watermelon and cucumber. Toss to coat.
- Sprinkle mint over salad and serve.
