Couscous Salad with Mint
A light and minty take on pasta salad, perfect for your next picnic, potluck, or Sunday lunch. Couscous provides a different texture option, while the tomatoes and cucumbers add pops of color.
Ingredients
- 3 cups cherry tomatoes halved
- 2 cucumbers seeded and diced
- Juice of 1 lemon
- 2 teaspoons salt
- 1½ cups couscous
- 2 tablespoons lemon zest
- ¼ cup olive oil divided
- ½ cup mint leaves minced
- ½ cup parsley chopped
Instructions
- Combine tomatoes, cucumbers, and lemon juice in a bowl with salt. Set aside.
- Prepare couscous per package instructions. Add lemon zest and 3 tablespoons of olive oil. Toss cooked couscous with a fork to break apart clumps.
- Add tomato mix, mint, and parsley. Drizzle remaining oil over salad, toss, and serve.
