Couscous Salad with Mint

A light and minty take on pasta salad, perfect for your next picnic, potluck, or Sunday lunch. Couscous provides a different texture option, while the tomatoes and cucumbers add pops of color.

Ingredients
  

  • 3 cups cherry tomatoes halved
  • 2 cucumbers seeded and diced
  • Juice of 1 lemon
  • 2 teaspoons salt
  • cups couscous
  • 2 tablespoons lemon zest
  • ¼ cup olive oil divided
  • ½ cup mint leaves minced
  • ½ cup parsley chopped

Instructions
 

  • Combine tomatoes, cucumbers, and lemon juice in a bowl with salt. Set aside.
  • Prepare couscous per package instructions. Add lemon zest and 3 tablespoons of olive oil. Toss cooked couscous with a fork to break apart clumps.
  • Add tomato mix, mint, and parsley. Drizzle remaining oil over salad, toss, and serve.
