Chicken Tortilla Soup

Mouthwatering flavors and wholesome ingredients make this the perfect recipe to keep you warm all winter long.
Ingredients
- 1 tablespoon olive oil
- 1 medium onion chopped
- 3 garlic cloves minced
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 28-ounce can crushed tomatoes
- 1 10.5-ounce can condensed chicken broth
- 1¼ cups water
- 1 15-ounce can black beans, rinsed and drained
- 1 cup whole corn kernels cooked
- 1 cup white hominy
- 1 4-ounce can chopped green chile peppers
- ¼ cup chopped fresh cilantro rotisserie chicken shredded
FOR GARNISH
- Tortilla chips crushed Monterey Jack cheese, shredded Green onions, chopped
Instructions
- Heat oil in a large pot on medium heat.
- Cook onion and garlic until soft. Add chili powder and oregano.
- Add crushed tomatoes, broth, and water. Bring to a boil, then reduce heat and allow to simmer 5–10 minutes.
- Add black beans, corn, hominy, chile peppers, cilantro, and cooked chicken. Simmer for 10 more minutes.
- Serve topped with tortilla chips, cheese, and green onion to taste.
