Chicken Tortilla Soup

Mouthwatering flavors and wholesome ingredients make this the perfect recipe to keep you warm all winter long.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 28-ounce can crushed tomatoes
  • 1 10.5-ounce can condensed chicken broth
  • cups water
  • 1 15-ounce can black beans, rinsed and drained
  • 1 cup whole corn kernels cooked
  • 1 cup white hominy
  • 1 4-ounce can chopped green chile peppers
  • ¼ cup chopped fresh cilantro rotisserie chicken shredded

FOR GARNISH

  • Tortilla chips crushed Monterey Jack cheese, shredded Green onions, chopped

Instructions
 

  • Heat oil in a large pot on medium heat.
  • Cook onion and garlic until soft. Add chili powder and oregano.
  • Add crushed tomatoes, broth, and water. Bring to a boil, then reduce heat and allow to simmer 5–10 minutes.
  • Add black beans, corn, hominy, chile peppers, cilantro, and cooked chicken. Simmer for 10 more minutes.
  • Serve topped with tortilla chips, cheese, and green onion to taste.
