Creamy Sweet Pumpkin Soup
Pumpkin-spiced and oh so creamy, this quick and easy soup is sure to be a Friendsgiving hit.
Ingredients
- ¾ cup water
- 1 small onion chopped
- 1 30-ounce can pumpkin pie mix∗
- 1 cup vegetable broth
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 3 cups sweet corn
- 10 strips bacon cooked and chopped
- 1 cup vanilla creamer
Instructions
- In large saucepan, heat ¼ cup of water over medium to medium-high heat, add onion, and cook until tender.
- Add remaining ½ cup of water and all other ingredients except creamer.
- Bring to a boil. Reduce heat.
- Stir in creamer. Simmer for 5 minutes.
- Serve hot.
Notes
∗NOTE: For a more savory option, substitute pumpkin puree for the pumpkin pie mix and whipping cream or milk for the vanilla creamer, consider reducing the cinnamon and nutmeg, and add salt and pepper to taste.
