GROWING UP IN WEST VIRGINIA, Chef William Dissen learned at his grandmother’s table that the best meals were cooked with fresh, local ingredients. Since moving to North Carolina, Dissen has made a name for himself nationally. He owns Haymaker in Charlotte as well as Billy D’s Fried Chicken, with locations at Wake Forest University, Elon University, and the North Carolina Zoo—plus the renowned Market Place Restaurant & Lounge in Asheville, which was named a semifinalist for the James Beard Award’s Outstanding Restaurant in 2024. And if that weren’t enough to keep him busy, he’s authored an incredible cookbook, Thoughtful Cooking: Recipes Rooted in the New South, where he has taken the traditional Appalachian flavors of his youth and added a modern twist. “Thoughtful Cooking is about shifting your mindset and unfolding from within, allowing yourself to explore and be curious,” he writes in the introduction. “It’s a form of self-care.”
