Pickled Blueberries
These tasty morsels will brighten any drab salad with both color and flavor.
- 1¼ pounds blueberries
- 1 red onion small, thinly sliced
- 1¾ tablespoons kosher salt
- ¼ cup sugar
- 1 cup distilled white vinegar
Mix salt and sugar in vinegar until dissolved.
Place blueberries and onions in a container and completely immerse in vinegar mixture.
Cover and refrigerate overnight.
