Pickled Blueberries

These tasty morsels will brighten any drab salad with both color and flavor.

Ingredients
  

  • pounds blueberries
  • 1 red onion small, thinly sliced
  • tablespoons kosher salt
  • ¼ cup sugar
  • 1 cup distilled white vinegar

Instructions
 

  • Mix salt and sugar in vinegar until dissolved.
  • Place blueberries and onions in a container and completely immerse in vinegar mixture.
  • Cover and refrigerate overnight.
