Preheat the oven to 350°.
Place a sheet of dough on a floured surface. Use a bowl (larger than the apple) and a knife to cut two circles from each sheet.
May need to cut one circle, then gather and roll out excess dough to make a second circle. Repeat with the remaining sheet.
Place an apple in the center of each piece of dough.
Fold the dough around the apple and press it together to form a ball.
Spray a 9x13-inch pan with cooking spray.
Place dumplings in prepared pan.
Make the sauce: In a small saucepan over medium-low heat, combine brown sugar, water, butter, and cinnamon.
Heat just to boiling, stirring often.
Pour mixture over dumplings.
Bake 30–40 minutes or until apples are soft and dough is golden brown.
Baste dumplings with the syrup several times during baking.
Serve warm with a scoop of vanilla ice cream.
