Chocolate Chip Banana Bread

Ingredients
  

  • 3 bananas medium to ripe
  • 2/3 cup sugar
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1 2/3 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup semi-sweet chocolate chips
  • 1 tbsp brown sugar

Instructions
 

  • Preheat oven to 350°. Grease a loaf pan with cooking spray.
  • In a large bowl, mash bananas with a fork. Add sugar, oil, eggs, and vanilla. Mix with spoon or hand mixer until well blended.
  • In a separate bowl, add flour, baking powder, salt, and baking soda. Mix well.
  • Add dry ingredients to banana mixture, stirring to create batter just until blended. Add semi-sweet chips.
  • Pour batter into loaf pan, spread evenly. Bake bread for 45 minutes, testing with a toothpick for doneness. Remove bread from oven and sprinkle top with brown sugar.
  • Gently run a butter knife around interior edges of loaf pan to help release bread. Place loaf pan on its side on a wire rack. Let cool before serving.
